Our story began with Sparta Taverna, founded in 2004 by Chef and Owner George Gouveris. Built on authentic Greek recipes, fresh ingredients and genuine hospitality, Sparta Taverna became a trusted destination for comforting Greek food served with care.

That same passion inspired the creation of Sparta Eats—the modern, fast-casual evolution of Sparta Taverna. Sparta Eats brings our traditional flavors into a fresh and convenient dining experience designed for today’s lifestyle.

Sparta Eats Hackensack:

Sparta Eats Hackensack introduced a new way to enjoy our food—freshly prepared Greek favorites served quickly and conveniently. From gyros, souvlaki and signature bowls to homemade specialties and family meals, everything is made with the same quality and care that have defined our restaurants for more than 20 years.

Sparta Eats Wood-Ridge:

Sparta Eats Wood-Ridge represents a special homecoming. After previously serving the Wood-Ridge community as Sparta Taverna, we are returning with a newly renovated restaurant and a fresh identity.

Now reimagined as Sparta Eats Wood-Ridge, the restaurant combines the history and heart of Sparta Taverna with the energy, convenience and modern style of Sparta Eats.

What Makes Us Different

We are not a typical restaurant chain. Our restaurants are chef-owned and personally operated. Chef George remains actively involved in the food, recipes, quality and daily experience of every location.

We prepare our food with fresh ingredients, time-tested recipes and a genuine love for Greek cooking. Our goal is simple: serve amazing food, provide warm hospitality and make every guest feel like part of the Sparta family.
